[Discussion] Update docs to accommodate new curriculum design

I am going to mark this issue as a discussion so we can start to figure how docs will need to be update to accommodate the new curriculum.

Then once we decide on a few things, we can break this work up into manageable PR's to implement once the new curriculum is live.

Renaming Coding challenges and practice projects page

I feel like this section could be renamed to something like Work on Workshops and Labs? Or maybe those could be split into two separate pages?

Then we could have separate pages for lectures, review pages, quizzes, and exams. 🤔

Or maybe we want to just have one page that says Work on Certifications. But that might be a lot of content for just one page.

Making a note here, that we will also need to include information about the proper naming conventions for labs, workshops, lectures etc.
This mainly refers to what the main dashed name format should be. Ex. lab-blog-post-card
