feat: add the possibility to change the prefix "Serinus" in the logger

Description

In a situation where more Serinus applications run at the same time keeping the prefix Serinus for all the applications can be confusing. Serinus should provide a way to modify the logger prefix to allow to differntiate the applications.

Requirements

• Add a method to change the prefix.
• The prefix should also be available in the logger factory class and in the onLog function.
• Update documentation
