Closes #59 and updates Storybook to 7.5.1. Turns out that we can remove, rather than replace
@storybook/addon-styling, as Storybook now seems to Just Work with Next.js.Also bumped the nvmrc from 18.17 to 18.18, so it matches the other Gessos.
