EDM-2704: Make new introspection fields configurable for OAuth2 providers

Adds support for new Introspection fields for OAuth2 providers as a result of flightctl/flightctl#2087

TBD: Is this mandatory or not. For now the UI assumes it's optional as indicated in the OpenAPI schema.
