Template vars not unescaped

There are escaped template vars in some of the `.github/workflows` ([e.g.](https://github.com/fhightower-templates/python-project-template/blob/main/%7B%7Bcookiecutter.project_slug%7D%7D/.github/workflows/pypi-publish.yml#L30)) which are never unescaped when creating a template.
