Dependency updates: What will they break? Will they break things?? Let's find out!

Updated all dependencies, including some major versions which will probably break something.

ESLint 8.0.0 was released and may also be of interest to include, depending on the goals of this PR.

It appears to have been a breaking change primarily due to dropping support for Node.js 10, 13, and 15.

Bump eslint to ^8.0.0 as well here? Need to ensure the plugins are compatible thought.

I think react-dev-utils should be bumped up.

Currently, the webpack.config.js uses ForkTsCheckerWarningWebpackPlugin that isn't included in "react-dev-utils": "^11.0.4".

Jest is also on 27.4.3 now

I don't mean to clutter this space, but thought I'd share the following since it might be useful to package maintainers especially, but any developer as well.

For anyone using VScode:

I tend to use this VS Code extension a lot called Version Lens

It adds a decoration (similar to Gitlens) next to the dependency name & also lets you click the new version name to update it.
Plus hover text that's linkedin directly to the repo so you can see the release/changelog of a package:
