Add Core and Extended metadata to Components generator script

We need to add Core and Extended metadata to each of the EDOT Collector components in this table, which is generated automatically: https://www.elastic.co/docs/reference/opentelemetry/edot-collector/components

Steps:

1. Create a manual table: Add components YAML file with Core and Extended info elastic-agent#8530
2. Modify automation in the opentelemetry repo: Update script for EDOT Collector components opentelemetry#303
