[Serverless] Document our backup strategy

On the documentation page where we talk about differences between Hosted and Serverless, it can be helpful to provide some transparency on the OBS that runs in the background:

• We take backups for 7 days for disaster recovery
• Elastic will restore these backups as needed in case of emergency
• We do not currently provide a user configurable backup/restore functionality (and then link to the roadmap page above)
