Bump up the version of Pypi

Hej guys,

The version on the Pypi registry still is 1.7.5 which causes issue with numpy>=2.0.
Would it be possible to update it ?

Thanks @loiseaujc! Just released 2.0.0rc3, which works with numpy>2.0! pip install --pre pysindy should allow these prereleases.

Currently the release plan is to finish up #386, and #387, which will be backwards incompatible, before releasing a full 2.0.0.
