[iOS/Catalyst] If the user specifies NULL for the DatePicker then the picker should default to Todays date when it's opened

### Description

Currently on iOS when you set the "date" value to null and you open the date picker the picker on iOS defaults to 1/1/1900

It should default to todays date instead

Currently on Catalyst when you set the date to null it crashes
