build: fix pnpm audit

Description

Removed the dep override from pnpm-workspace.yaml.

Commands executed to update the affected deps:

cd docs
pnpm update astro
cd ..
pnpm install

Additionally, it increases the size limits for the packages, due to some dependencies that were updated and increased the final bundle size.

How Has This Been Tested?

Same tests should still pass.
