Fire a container with:
docker run --rm --name jekyll --env LISTEN_POLLING=1 --volume="$PWD:/srv/jekyll" --volume="$HOME/tmp/jekyll-cache:/srv/jekyll/vendor/bundle" --publish 4000:4000 --publish 35729:35729 jekyll/jekyll sh -c "bundle config set --local path 'vendor/bundle' && bundle install && sleep infinity"
Then run previews with:
docker exec -it jekyll sh -c 'bundle config set --local path 'vendor/bundle' && bundle exec jekyll serve --host 0.0.0.0 --livereload'
Note that '--livereload' does not.
At the end of the day, clean up the container with something like:
docker kill jekyll
