Add `ipympl` to setup instructions

To show images with "hover over coordinates" using `matplotlib.pyplot.imshow` in JupyterLab requires package `ipympl` for the `%matplotlib widget` backend.

`conda install -c conda-forge ipympl` will need to be added to setup instructions #142 including additional directions on where to run the command for different operating systems.
