Bump vitest to 5.0.3 so test runs stop leaking /tmp dirs - #1479

vitest 5.0.2 creates /tmp/<21-char id>/ssr for each run and never removes it (the core Vitest._tmpDir; only the project dir is cleared on close). Each run left about 11 MB of transformed modules. 7,131 such dirs filled 78 GB on the shared box between 09-30 and 10-02. 5.0.3 removes the dir on close (vitest-dev/vitest#11248). Checked: tests/run/pricing.test.ts under a private TMPDIR leaves one <id> dir on 5.0.2 and none on 5.0.3. format:check, typecheck, knip, tui vitest (90 passed) pass. observer vitest fails the same 5 artifact-smoke tests on main and here, because they need a built dist/.
