[docs]: Stargate docs general audit & cleanup

General Audit / Updates

• audit "amino" usage across docs and mark all as legacy
• update proto generated structs to show proto messages directly
• Use simapp code snippets instead of gaia ones

Module Docs Updates

We should audit through other modules and create issues for them to update to Stargate, or add them to the bottom list here if no changes are necessary.

For each module:

• go into the spec/ folder
• make sure the content is up-to-date
• Follow the "General Audit / Updates" section recommendations
