We should tag latest image with "latest" tag in the registries

Currently the container image of the latest release is not tagged with "latest", so some user may encounter error following https://cortexmetrics.io/docs/getting-started if they skip building Cortex locally part. We should fix this,

It's considered bad practice to use the latest tag anywhere. The image tags should be immutable.

Yea, I agree using latest tag is bad idea (been there, done that :-) ) except for "getting started experience". So I wonder if we should not publish latest tag, but advise against using it in most cases.

Right, I think building a local copy of Cortex is pre-requisite, but maybe not clearly called out in the doc, so some user may skip it. So may be what we should do is re-arrange the getting started doc a little bit to start with. But doing a build while I am trying to get something running ASAP is bit of annoyance.

Maybe another solution is to default the image version to newest released version tag, and we update the doc as part of release process; hopefully automated way.
