general cleanup stuff

uses "@200ms/anchor-ui": "*" instead of "@200ms/anchor-ui": "1.0.0" so it always tracks latest version (if we start changing them in future)
package tsconfig.json extend tsconfig.json in root dir to reduce duplication
removes unused rollup* devDependencies
