Provide "build all" options for CTK

To easily switch on all features or feature sub-sets in CTK during CMake configuration, we should add some "build all" variables.

This has already been discussed here

and it was agreed on being useful. A branch by JC was pushed here two years ago:

https://github.com/jcfr/CTK/tree/add-build-all-cmake-option

Since the top-level CTK CMakeLists.txt file changed a lot since then, I will re-do these changes. The variables will be most useful for dashboard clients to ensure everything compiles without errors.
