Document CockroachDB's I/O profile

@andreimatei mentioned having a discussion with @a-entin, @ajwerner, and a few others about CockroachDB's I/O profile and suggested we should explicitly document it. Giving users a sense of the IO resulting from SQL, jobs, and other operations would be a factor in choosing and tuning hardware.

@rmloveland, the Production Checklist feels like the obvious place for this, but we'll see. @Amruta-Ranade, this could further support your hardware selection docs as well.
