Update roadmap / timeline

Hi all,
hi @StRigaud, @jni, @tlambert03

I think it's time to update the roadmap and timeline.

What we could add

• scipy/cupy interoperability
• documentation target platform (readthedocs?)

What we could move to the "Potential future extensions"

• Julia support
• ITK wrapper

We could also adapt the timeline to release in 2022.

Looking forward to hear your thoughts :-)
