Adding back arm build

I tested the latest main code on an M mac and it bundled and ran great without me having to change anything.

I saw this older PR from https://github.com/dakotahp and I thought I would refresh it and let's try again to add back the arm build

From what I can see, the CI isn't finishing because of the queenbee-plugin to which I don't have access to. I am curious if this would pass the CI if someone else were to run it?

Ah sorry @SamuelAierizer, I re-enabled the arm builds in #2422 (in response to the discussions) before seeing this PR. So this PR is no longer needed.

I also don't think we need the additional docs/scripts here, since the image publishing is part of the CI pipeline. But thanks for your contribution 🙏
