feat: add minuet-ai as copilot alternative and allow more AI adapter

This PR:

• Adds support for minuet-ai as copilot alternative edit prediction sources
• Centralized config for codecompanion and minuet-ai
• Add support for alternative codecompanion API provider config

When using the 0.12 branch for daily driving, I happen to find occasionally freeze caused by blink-ripgrep plugin.

This plugin, when used under complex directory, it taking unneeded actions for grep files for potential content. And this is causing a about 120s or more time freeze randomly

I've profiled with plenary nvim, and it's flame graph does find out this problem, which could be reproduced stablely.

I'm sorry for the late reply. I've been a bit swamped recently.
Works fine in my local setup.
One small thing: we might want to tweak a few of the default configurations.
