It appears this problem was due to the wallet not waiting for the mint TX to confirm. This would cause the wallet to attempt to mint the second NFT using the same UTXO that was already spent. The network would then reject this.
The proposed fix is to add similar waiting/locking mechanism that is used when performing transfers.
