[Docs Bug 🐞 report]: Replace all occurrences of alequetzalli throughout the docs

Describe the bug you found in AsyncAPI Docs.

There are several PRs trying to achieve this goal, but after introducing and merging my PR related to reusable fragments (#3269), all these PRs became irrelevant because the content of documentation files has changed.

This issue will fix all the occurrences considering the new approach with the fragments.

Attach any resources that can help us understand the issue.

Within the new approach, contribution notes were replaced with the fragment assets/docs/fragments/contribution-notes.md so most of the work has already been done.
The only thing left to do is to properly update the rest of the links and names outside the docs (like blog and service repo files)
