One question: what about using GitLab's Helm Chart for deploying? Helm is fully supported by K3S.

A good suggestion to add to the notes. Although the defied Glitlab install is fairly simple and straightforward with just three manifests: service, deployment, and ingress. I'll be revisiting this project in a few weeks and will add your suggestion as an alternative.
