[User first experience]: Quick start examples should have case insensitive tables access.

One observation I had while following the quick start based on the docker image found that a pre-loaded couple of tables accessibility isn't case insensitive.

I know there is a property to enable case-insensitivity config enable.case.insensitive.pql=true. Also, found that a couple of times, folks asked the same question on the Apache Pinot Slack channel.

I think the quick-start docker image way is probably the first experience for new users trying Pinot, and wondering if we can make these pre-loaded tables access case-insensitive. Would it be a better user experience? Just making this issue to discuss about it.
