[Task]: mark stanfordNLP dependencies as provided

What needs to happen?

To make it clearer for SBOM tools and to avoid accidents, we should mark the dependencies under hop-transform-stanfordnlp as provided so they do not accidentally get included when making superjars.

These dependencies are (L)GPL and should in no way be shipped with our product.
But they are needed at compile time.
