[Docs] Fix variety of warnings and errors in the docs build

Describe the enhancement requested

The docs don't currently build cleanly on my system (following our docs). A recent CI build of the docs will show warnings and errors that we seem to ignore (probably for a reason). After doing a quick scan of these, a number seem like things we should fix.

I'll file a PR to address what I can and at least get my local docs build back to a working state.
