stepper(guide): example inaccessible in dark mode

The example in the "Creating a custom stepper using the CDK stepper" Guide doesn't display properly or meet WAI a11y standards. The step labels and arrows are unreadable.

Currently, styles are provided by example-custom-linear-stepper.css
Should we be using neutral colors that can work with both dark & light modes? or we need to use some styles from the pre-built themes?

@walvekarnikhil yes, that would be greatly appreciated!

We should remove the hard coded CSS color overrides.

Then instead of

[class.example-active]="selectedIndex === i"

We can probably do something like

[color]="selectedIndex === i ? 'primary' : undefined"

This would use the theme colors which will account for dark/light mode changes.

Since this is the CDK example we will not be able to use [color] property for the step buttons.
In the prebuilt themes, we don't have any class which can set the text color.

Please let me know if I am missing something here.

Ah yes, that's a good point! They are native buttons without any Material classes.

If we remove

Chrome still applies the user agent stylesheet of

color: -internal-light-dark-color(buttontext, rgb(170, 170, 170));

Which results in black text for both light and dark themes.

If we change the black to

color: inherit;

Then the button picks up the theme color.

Then for the active step,

to pick up the theme's text color (for both the button text and inkbar border) and use font-weight instead of a theme color, in addition to the inkbar, to indicate that the step is selected.
