Done in c55a4d1 and 8a6324a.

Z-stack is a first-class analysis mode now. Single-FOV z-stack fitting landed first (c55a4d1), then the full mode (8a6324a): group_zstack_files() groups slices per (region, timepoint, scan), projects pick them up with scan_type='zstack', and the FOV panel gets a Z-stack folder picker. Batch fitting de-duplicates, so slices belonging to a stack are not also fit individually as separate FOVs.

Stitching z-stacked (and timelapse) tiles into a mosaic is a different job and is tracked in #21.
