Lacking info about what happens when the packet is created by the OS, and how it goes to the NIC, out the ethernet cable, and on to the next-hop router, routing decisions, packet forwarding, etc.

I’d go as low as possible :) I believe that’s the point of this repository. Just don’t forget to indent one more level of bullets when you go deeper :)
I’m personally interested what’s happening in BGP level, and also as (especially) WIFI level.

When I ask this question in interviews, I get people to draw a network diagram of all the connected devices; otherwise we can get crazy. This might be something we consider as well.

In terms of explaining the most I'm thinking something like this:

computer -> wifi -> access point -> switch -> end user router (dlink/netgear/whatever) -> ISP physical network (cable/dsl/fiber/etc) -> ISP edge switch -> ISP core switch -> ISP edge router (OSPF) -> ISP core router (BGP) -> Transit/Peer Router (BGP) -> Target core Router (BGP) -> Target edge router (OSPF) -> Target Core Switch -> Target Edge Switch -> Target Load balancer -> Target webserver

And that's assuming we don't get into any intrusion detection / prevention.
