Add comprehensive tests to Source Declarative Manifest Docker build

As per the discussion in PR #58 (#58 (comment)), we need to add more thorough tests to the Source Declarative Manifest Docker build.

Currently, the test only runs the spec command. Including additional tests such as check and discover will provide better confidence in the image functionality.
