Add 1.21.9 and 1.21.10 support

I need the mod updated for one of my servers. I'll try to add support myself if I have time, otherwise, is it just like I did last time in #225?

I totally forgot about this. At this point it is also worth looking at 1.21.11. Anyways, I'm very busy these days so I don't think I'll be able to update it.

It doesn't seem like there has been any development in EssentialGG/essential-gradle-toolkit. I think the options are the following:

• Open a PR in EssentialGG/essential-gradle-toolkit adding support for 1.21.10
• Try to find other multiversion tool

Ok, I updated fabric up to 1.21.11 in EssentialGG/essential-gradle-toolkit.

I don't have time right now to test PAPIProxyBridge with that build. But it compiled and passed all the tests. So, I opened the PR directly 🙈.

Maybe some of you can try it.

I saw #230 was opened a while ago:

According to the GitHub repository of gg.essential.multi-version https://github.com/EssentialGG/essential-gradle-toolkit/blob/master/src/main/kotlin/gg/essential/defaults/loom.gradle.kts It only supports versions before 1.21.8, so I should try to modify it next

Maybe it is worth looking at it again.
