Fix README formatting issues across project files

This PR resolves multiple formatting and typographical issues found throughout the README files in the repository.

Issues Fixed

Main README.md

• Malformed HTML closing tag: Fixed <h3></a> to proper </h3> in the announcements section
• Broken markdown links: Removed extraneous asterisks from link formatting:
  • - [**Artificial Intelligence](...) → - [Artificial Intelligence](...)
  • - [*Sustainability and Renewable Energy](...) → - [Sustainability and Renewable Energy](...)

Project README Files

• Typo in registration text: Fixed 11 project README files that had an erroneous .s appended to registration instructions:
  • "to **register** your intent to complete this project.s" → "to **register** your intent to complete this project."
• Missing space in submission text: Fixed spacing issue in Battery Fast Charging Optimization project:
  • "...256)</strong>to <strong>submit</strong>" → "...256)</strong> to <strong>submit</strong>"
