Improve cmd-line redaction for telemetry

Telemetry excludes all open-text flag values to ensure privacy.
Currently the strategy() func removes such values by name.
It would be better to generate the list of redacted fields automatically from the flags so that we don't need to remember to update this every time a new flag is added.
