[Bug]: PIPES_AS_CONCAT sql_mode is unsupported

Hey,

I was trying to check out the app this morning but I'm immediately hitting the error mentioned here: transact-rs/sqlx#2034

We're using Vitess and Vitess doesn't support PIPES_AS_CONCAT, but it looks like SQLX now has support to stop using that concat mode - Would it be possible to propagate this to the application, or make it the default?
