Integrate business telemetry

Right now we haven't integrated a business telemetry solution i.e. metrics and tracing. We should collect basic telemetry to understand the mcp-tef's usage without incurring into privacy issues. Most probably this would involve deploying an OTel internet facing collector and point to it from mcp-tef
