Stale v2.0.0 tag on Docker Hub makes dependency bots propose a downgrade

The spectolabs/hoverfly:v2.0.0 image is still published on Docker Hub (pushed 2023-02-21). Per #1060 it was a mistaken tag, and it was removed from GitHub releases and the docs, but not from Docker Hub.

Because v2.0.0 sorts above v1.12.x, Renovate and Dependabot open "major update to v2.0.0" PRs. Merging one actually downgrades to a 2023 build.

Could the v2.0.0 tag be deleted from Docker Hub?
