This is a simplification, also avoiding the need to manually add future docs
in the IaaS deployment examples.
It also addresses the missing sidebar link to deploying CiaB in a VM
(#296).

- Extend PlusServer gx-scs docs to mention and explain SCS2, providing
  endpoints for it.
- Add list of existing projects on SCS2 (as far as I can see them).
