Remove mentions of the Pytest Conversion work in the docs

Follows #6212 

This currently still has a purpose for downstream packages, but eventually will become redundant. This includes the Conversion Checklist, and similar pages.  

This issue is to ensure that this is not forgotten once its use has expired.
