Replace copy-pasted libs with poco

[AnotherFoxGuy]

This will make the code have a more consistent style, and also the need to maintain/update the code from 3rd party libraries

List of libs that can be replaced with poco:

• jsoncpp 🔧 Replaced jsoncpp with Poco::JSON #141
• sha1.c 🔧 Replaced sha1_util with Poco::SHA1Engine #140
• config parsing in config.cpp
• http.cpp
• logger.cpp (maybe?)
