Updates the generate_swiftinterface and API diff checker to use Xcode 26.3

Overview
Updates the CircleCI swiftinterface-xcode-version anchor from 26.2 to 26.3, so generate_swiftinterface and the API diff checker run against the newer Xcode toolchain.

Regenerates the stored api/revenuecat-api-*.swiftinterface baselines to reflect the new compiler version metadata (Swift 6.2.4 / interface compiler 6.2.4) across iOS, tvOS, watchOS, visionOS, and macOS.
