Instead of just matching by serial exactly, check xcdevices for the list of devices and match by name/udid (with some flexibility)

GC seemed to be cleaning things up sometimes too early here.
idb is chatting on stderr so let's not always log it
This allows getting services later
With step descriptions so logs have helpful info
