Documentation Site Counts, Figures, Plots are Out of Date

The counts, figures, and plots on the documentation site were generated using code in the old github actions pipeline. Since this pipeline was removed, this code has been run manually to generate and update figures. Ideally we should integrate this into the build_all.py script.

The infrastructure of the versioning code in build_all.py is already designed to push to github this won't be a big effort to add in, however the plotting and statistics scripts may need some edits as the data format has changed since this was last run.
