docs: add accessibility statement

Description

This PR adds a link for the accessibility statement in the footer, but also a page describing the accessibility statement that has been done by the Orane a11y experts on the 7th of July, 2024.

The original files to include are in HTML so I've transposed them to Markdown + HTML:

• Fixed some classes usages in the tables
• Fixed the CSS to work with the light/dark mode approach
• Fixed a lot of typos

Types of change

• Documentation (non-breaking change which adds functionality)
