Fix/recover self-hosted GPU CI

To date, the self-hosted GPU CI is failing with reasons that are unknown to me. As in https://github.com/OpenFreeEnergy/feflow/actions/runs/17015279700/job/48236814086 it seems to get stuck and we are not getting much output.

We should check to see if it matches our config on openfe, I am guessing that the image just needs an update
