[Bug]: Tesseract not installed

Running tests fails on a machine that does not already have tesseract installed.

the blocker for Windows is that there is on 1 line installation for Windows.
We have to download the binary file and then manual add the dir. to PATH variable.

I am encountering this strange error for Windows installation

For mac, we could install tesseract through homebrew in the install script if there are difficulties installing through other means. This does require homebrew to be installed though.

Also, is it possible that there is a fork/mirror on pypi for tesseract? I noticed a few but I haven't tested them. If so, we could just use Poetry.
