Currently some of the Docker images we use for compose tests have version latest. This causes sometimes compose tests to fail for reasons totally unrelated to new changes introduced. We can pin exact version to be used for tests. We can also add Docker version updates to dependabot, so we can continue testing new versions in an isolated manner.
