docs: bump version to 1.1.1 and update changelog

- Patch bump (1.1.0 -> 1.1.1) for the build fixes shipped in d95b061
- Bring the Chrome and Firefox manifests in sync with the package
  version; they had been stuck at 1.0.6 since the 1.1.0 release
