[FEATURE] Add `mock` config option for the `Provider` and `OllamaProvider` classes

Currently, we configure this in our ResponseGenerationPipe, but it might also be added to our base provider class. This will enable us to properly the necessary abstract classes to incorporate this mock functionality for all existing and future ones.
